Ginger Miso pulled Beef

preparation time: 10 min cooking time: 3 - 5 hours servings: 6 - 8

Ingredients:

4 LBS chuck or other roast, cut into chunks ( approx. 2 inches)

1/2 cup soy sauce

1 cup water or beef stock

3 tbsp miso paste

2 tbsp mirin

2 tbsp honey

1/4 cup brown sugar

1 1/2 tbsp rice wine vinegar

4 cloves garlic, minces

3 tbsp ginger grated

1 tbsp chili flakes

green onion, for garnish

sesame seeds, for garnish

directions:

Combine soy sauce, water, miso, honey, sugar, vinegar, garlic, ginger and red pepper. flakes in a small bowl, mix to combine.

Add meat to your roasting dish, cover with soy sauce mixture, cover and roast for 3 hours at 325 degrees, then remove from the oven and check temp. place in the oven uncovered for 30 minutes and check temp again. If all the liquid has evaporated, add another half cup of water of beef stock and toss.

once meat has been fully cooked/pulls apart, shred a bit and place back in the oven at 450 for 15 minutes to get a bit crispy

serve over rice and garnish!

I served on a bed of fresh basmati rice, sesame carrot and celery “coleslaw” and roasted broccoli!
