green caesar dressing

preparation time: 10 min servings: 2 cups.

Ingredients:

*1 egg

*1 whole anchovy or 1/2 tbsp anchovy paste

*1 tsp mustard (i used whole grain)

160 grams grapeseed oil

*1/2 lemon, juiced

20 grams water

5 grams fresh parsley, coarsely chopped

3 grams fresh cilantro, coarsely chopped

5 grams green onion, cut in 1 inch pieces approx.

2 fresh garlic cloves, approx. 2 tbsp

10 grams parmesan, shredded

1 tbsp dried oregano

*1 tsp salt

*1 tsp pepper

directions:

place all the ingredients with the * in a wide mouth mason jar or tall bowl.using an immersion blender, blend everything in the mason for 10 seconds to fully incorporate. once everything is blended, slowly pour in the grapeseed oil, the egg and lemon mixture should be thickening! (this step can also be done in a food processor! (: )

once you have made your mayo base, add the rest of the ingredients and blend till smooth and there are no big chunks of herbs!

this caesar dressing can stay good up to 1 week in the fridge! <3
